    Smokin' a brisket and ribs tomorrow. Was gonna try putting mushrooms and onions under the brisket to catch the dripping and cook them. I normally cook between 250-275. Any guesses on how long the shrooms and onions need to cook at those temps? I have an offset BTW if it matters.

    Here is what I would do if I were you.... Put the onions and shrooms under the brisket when i gets to 140* or so Let it go until around 165*... Pull the brisket and wrap... then take your onions and shrooms inside... they will be soft...at this point... then put them in the frig....once your brisket is finished bring it in and let rest.. while it is resting take the onions and shrooms to the skillet and heat up and finish to your liking!
