    Chicken Spiedies

    Spiedies, pronounced “speedies”, are a NY regional favorite and for good reason.
    For those of you not in the know, Spiedies are skewered grilled meat that has been
    marinated and dressed in Zuzu sauce, placed in a toasted hoagie, sub, hot dog bun
    or Italian bread and eaten as a sandwich.

    Zuzu works with lamb, pork, beef and even venison but today we are making Chicken Spiedies.

    I use chicken thighs for this cook because I want the finished product to be as tender and juicy as possible.
    A long 24-72 hr marinade time.


    Skewered Marinated Chicken


    Chicken hits the Primo XL. Grill over direct heat.


    Yay!!! Spiedies!!!



    Reserved marinade simmering on the stove



    Italian bread grilled and moistened with Zuzu


    Throw on some shredded lettuce



    Add a couple of Spiedie skewers8


    Brush some simmered Zuzu onto the finished meat. Now that, my friends, is a thing of beauty!



    This completed Chicken Spiedie Grilled Sandwich is worthy of the grill Gods!!!

        I can't see them either, but the samich sounds good

        If you go back and try to edit your post, or try adding your pics to a new post, try hitting "Preview Post" first to see if they show up for you. Just trying to help...... Are you uploading them to Photobucket or something similar

                      The secret to Spiedies is twofold. A great Zuzu and a long marination. Marination time is a minimum 24 hrs and can run as long as 3 days. I usually go with a 2 day marination but not this time. I can't wait that long because I’m jonesing so 24 hours it is.

                      There are many recipes for Zuzu and they all use the same basic ingredient list. More or less. I've settled on this one because it has more.

                      Zuzu marinade/sauce
                      Makes enough for 3 lbs meat.
                      -1/2 C Olive oil
                      -1/4 C freshly squeezed lemon juice. (About 2 large lemons.)
                      -3/4 C white wine vinegar. (Use red for pork, lamb etc.)
                      -1 rounded T sugar
                      -6-10 cloves garlic peeled. I use 10 large. (Can’t use to much garlic.)
                      -1/2 tsp red pepper flakes
                      -1 tsp dried oregano
                      -1 tsp dried basil
                      -1 tsp salt
                      -1/2 tsp freshly ground black pepper
                      -1/2 C picked mint leaves. (About one .66oz container.)

                      Put it all into a blender and let 'er rip.

                      Once you get a whiff of this stuff you'll know you've made the right decision.
                      Cut the meat up into skewer-sized pieces keeping cooking shrinkage in mind. Place the meat pieces into a large zip-lock bag and pour all of that wonderful Zuzu you’ve just made over the whole mess. Massage the bag a bit to evenly distribute.

                      Now comes the hard part. Put the bag into the fridge to marinate for a minimum of 24 hours and up to 3 days, turning occasionally. I usually go for a 48 hr marinade but that's just me. The vinegar in the sauce will begin to "cook" the meat but don't worry. It will be fine.

                      You can reserve some of your freshly made Zuzu to use as a dressing sauce later but I like to bring the left over marinade to simmer for a couple of minutes to mellow out the garlic and especially because raw chicken has been soaking in it.

                      Give this a try. Highly recommended.

                        Thanks for the recipe, looks like a great sammie.
                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.
