  • Shredded Beef, Mountain Dew Apple Dumplings and White Chicken Chili

Went up north for the Memorial weekend. Brought the 6 qt Lodge and 5 qt Wagner DO's with.

On Saturday afternoon threw an almost 4 lbs. chuck roast into the Lodge. Sprinkled it with 2 packets of Italian dressing mix. Stuck it in the fire. After about 4 hours, I added some rehydrated morels and half of a large Vidalia onion. That's when I discovered I forgot the camera, and the cellphone was completely dead. Put the phone on the charger. Left it cook for about another hour. Hate phone cameras. It was raining and getting dark. The pic of it in the DO was so bad I didn't include it. The shredded pic isn't any better. Served on hamburger buns. It was very good. No leftovers.

Wanted to make the apple dumplings in the other DO, but would have had to cut the recipe in half. That wouldn't have been enough. So I did this one in the oven. Followed the directions Becky gave out. OMG....this stuff is good! It is very sweet, and you could probably drop a 1/2 cup of the sugar. Ice cream would have been great.

Sunday evening it was raining. Again. So I used the Wagner in the oven. 4 large boneless, skinless chicken breasts, 70 oz. bottle of Carlita's chunky mild salsa and two 15 oz. cans of white kidney beans. After 2 hours at 300 the chicken was falling apart. Dropped in 2 blocks of cream cheese and broke up all the chicken. My brother and I like it spicier, so brought a couple different hot sauces for us. This was really good too.

Was a good time despite the cold temps and rain. Fishing stunk. Water's still too cold. Got about a dozen sunnies and one crappie. Oh well, we tried.

Sorry for the crummy cell pics, but it did happen.

Looks great, Ray! I hear you on the sugar in the dumplings...I didn't use half of what the recipe called for and they were sweet enough! Going to have to try the Italian dressing mix on a chuck sometime!

A friend of mine made this last weekend. She used 8 slices and used 1/2 cup of each, butter, sugar and mountain dew. Said it was perfect, but not enough. Lol.
