  • Smoked Meat Baked Beans

Okay have been wanting to do some home made baked beans so today was the day. These are not just any baked beans thought these are Smoked-Meat baked beans!!

If you recall I had some neck bones from the pig we butchered and many here said to use them in beans... so onto the smoker they go!

Did them with a mustard and then hunky rub and onto the smoker for about 6 hours!

Off the smoker here is what we have...

    And all pulled off

Figured why we have the smoker going why not smoke up some jalapeno cheddar brats.

    Off the smoker...

    Okay onto the beans!!

Took 2lbs of Pinto beans and a 24 hour soak took place after a sort. Then a rinse and saved the water from the soak...

So took some bacon and crisped it up. to it I added onion and then the jalapeno brats,

Then the neck meat, then some left over smoked ham from Christmas that has been vac packed in the freezer....

To that I added 1/2 cup molasses, 1/3 cup brown sugar, 1/4 cup Hunky, 1/4 cup of RP Moroney's BBQ sauce, and 1/4 cup of Blues Hog BBQ sauce, 3 Tbls yellow mustard.

Then the beans and added H20 to cover by one inch and brought to a boil.

Then into the oven at 300* for about 3 hours covered, and then uncovered and added about 1/2 cup of ketchup and let the liquid evaporate away!

    Here they are!

Oh man these are great. Cant wait to have them with my burgers tomorrow night!! Thanks for looking!!
