1st comp ever, and good gosh, that was an experience. It was a fund raiser for Maize KS school District. It was a peoples choice thing with no categories, but was a great time.
My new smoker arrived at 6:30 PM friday night, a shiney new Yoder Kingman on a Comp cart. It is a thing of beauty. I needed to burn it in and season it so....while it was still on the delivery trailer, and under my carport on the side of the house I lit fires and got some heat and smoke in it till about 1:30AM. Set the alarm for 5 AM to load up and head over to the comp....Over slept by 2 hours...oh boy.
So I'm already wigging out, Did I mention I am pretty much a Team of 1?
Unload, took 6 of us to get it off the trailer as the winch was only mounted...wasnt wired for power yet. I want to say that all the people competing were helpful as heck. So I get the fire going and get set up, My plan was to trim the butts while the smoker came up to temp and get them injected and rubbed. That was going fine until my hands started cramping on the knives...lol. How I didnt cut myself......
Smoker came up to temp, and I finally got the butts on at 10:30 or 11, I cant remember. We serve at 6PM. Yes, I'm stressed out over the time. The Yoder stayed at 250....like clockwork. Butts hit 150 at about 3, so I crutched them in foil. Praying they would hit temp by 6PM. They did! Pulled 2 out and left them in foil and wrapped them in towels and they went into a cooler packed with towels. The other 2 we started pulling and getting the sample cups going.
Didnt place but got a lot of great comments, I think if they had beef, pork, and chicken categories, I might have placed, but the top 2 had briskets that were awesome. I had a great time, am still exhausted, but cant wait till the next one!
