Had some chix breasts left over from the 4th of July in the freezer. They had been treated with MH brine and MHGP no salt. Took them out of the freezer last night to thaw and got to thinking how I was going to do them up. I didn't want to just re heat them. So I thought I hadn't had buffalo wings in awhile(and I still haven't), but this salad came together nicely instead. And for this post I actually measured the ingredients just to be helpful.
2 bone in skin on chicken breasts pulled off the bone and shredded including the skin.
1/2 sweet onion chopped
2 stalks of celery chopped
1 smallish red pepper chopped
1/2 cup blue cheese crumbles
1 TBSP MHGP no salt
1/4 cup mayonnaise
1/4 cup buffalo wing sauce(I used a dollar store brand)
Combine the ingredients and let chill for about an hr, taste, and adjust. I served mine on a pita bread I stuffed with bagged salad. This actually makes quite a bit of salad. On a personal/health note. Between the brine, blue cheese, and wing sauce this really doesn't need added salt in my opinion. Hence none on the ingredient list.
