  • Breaking in new skillet

    Was looking for a way to grill while camping so I figured I would give this a shot, works great.

    added a bit of crisco and got the pan hot (oil just started to smoke).












    I realized after the first three pieces it is best to do only 2 pieces at a time, this way I can flip the steak on to the hot side of the pan.

    Any other tips would be appreciated.

      Not a huge CI guy, butt maybe some bacon grease to fry em in

        None on these, But I usually salt the steaks and sit at room temperature an hour per inch, rinse, jaccard, then dip in soy an Worcestershire before grilling.

            I think you broke that skillet in perfectly! A little bacon grease won't hurt though. Is that the square grill pan? I have the round grill pan and love it!

                One of the biggest mistakes in "pannery" is overloading the pan for browning operations. You need the extra BTU's to do it properly, and too much meat really sucks the heat out.

                  Quite true, thank goodness our stove has 1, 14,200 BTU burner this is the one I use for the griddle, gets hot quick.

                    also pat the meat dry with a paper towel.......things WILL NOT brown until the moisture is gone........until this happens you are steaming.
