We had a lamb roast in the freezer, so I checked out the lamb section here for ideas. The inspiration for this came from OzHector, so thanks to him for that. Didn't quite have all the ingredients that he used, but made it up as I went along. Started with a nice rub, can't remember what all I put in it, but I know it had paprika, cbp, fresh minced garlic, cumin, and plenty of fresh mint.
Also did some stuffed peppers:

Made some cucumber sauce with lite cream cheese, yogurt, chopped cucumbers, red onion, and chives that turned out really well. Also made a dressing for the greens of evoo, balsomic vinegar, and some more chopped mint. Here is everything plated up:
