  • 2 tri tips & a beer stuffed Yardbird

    Just getting around to posting this from the big Mrs. Otis family B day celebration. Her son flew in from San Diego and their family has a lot of birthdays in August, so we celebrated them all.

    Started out with 2 tri tips from Costco. I did these simple with a coating of Italian dressing and Totanka Dust wrapped in plastic & back in the fridge overnite. The yardbird was seasoned with some left over Slap Yo Daddy rub and injected with the garlic butter recipe from Rob's Smokingpit site - GREAT injection recipe, Rob. They got done a little early, so they went in the oven wrapped in foil on warm (below 200) and the beef cooked a little more than the rare it was when I put it in. Oh well, you can see how juicy it was and the Italian dressing and T Dust was a great combo.

    The chicken was cooked on indirect heat on the Big Bahanga gas grill on 325 with an AMPS on the side using hickory pellets. Came out great too. Had just about enough left for a couple of Chicken tacos.

    The last 2 pics are of some of my inlaw taste testers and Mrs. Otis with her son from S.D. Good time had by all except for the over expanded bellies that came from eating too much. I dont know how Joey Chestnut does it

      Great looking food man. The marbling on those tri tips looks fantastic even to my crappy eyes.

        Thanks G man, Costco in Az really comes through for great meat (and usually a $200+ hit to my bank account). Its rare that I walk out of there without something from the meat dept. and their Tri Tips are usually that good.
