  • Jerky and some assist!

    Top Round/London Broil was on sale for $3# so I picked up a few for some jerky. Put them in the freezer and then trimmed them up so I could run them through the slicer:



    Did 4#'s this afternoon. Got them cured and spiced up. Even used some Smitty's along with some other heat. Been doing this recipe for awhile.



    Resting for Sunday:



    For the assist, since I still have not ventured into the sausage type deal, I still buy mine. I get this (3) Felino from a company in Utah. It is Soooo good. I got them yesterday so I ran one through the slicer since it was running:





    Will be a Great weekend with Felino, Jerky, Cold Beer and Football. Even get to watch the Avs and still undefeated at 4-0.....could be a very interesting hockey year We are due to get out of the valley and back to the peaks.

    That's gonna be great! What do you do with the assist? as is?

    Great price on your top round. I just paid 3.15 for eye of round at Costco.

      Thanks, it has many uses. I eat it as is, sometimes for a quick snack.

      However, what is really good is a Ritz Cracker, a slice of Felino (or get some sliced pepperoni, etc. from the store) and a slice of pickled jalapeno pepper on top for some heat and crunch. I even use Premium Saltines as well as I love them as well. They are addictive and go fast if guests are around. If Jalapenos aren't your game, a nice slice of a good sharp cheddar works very well.

          Nice start with the jerky. Look forward to the finished shots.

          Love the Ritz, salami and pickled jalapeno snack idea. Wouldn't object to some sharp cheddar on mine too.

              I noticed Ritz now has a vegetable flavor. Similar, but not as strong as Vegetable Thins, and less salty too. I can't find them north of the border but I now how six boxes from my bi-monthly visits south. Perfect for salami and cheese or smoked salmon.

              I've never tried Felino Italian Salami but those "white flavor crystals" tell me it'd be awesome. I also am a big fan of hungarian.

                  Sorry, I forgot to post the results , thanks for the reminder.

                  Here's the batch I did yesterday. Actually more meat there than it looks like but you get the idea. Put another batch on this morning. What I had prior got eaten up during the games yesterday. It has some good heat to it.
