  • The Cheddar & Mushroom burger slow cooked with alder.

    Hi all, how are we all doing this fine evening?

    I got to playing around with another hamburger recipe. I usually just mix my veggies raw with the burger meat but this time I sautéed them. Mushrooms, red onion, garlic, rosemary and one Anaheim pepper. All this went into 6 pounds of 80/20 ground beef along with 4 eggs, 1/2 cup Worcestershire, 1 Tbsp. chili powder, 1 Tbsp. onion powder, 3/4 lbs. cubed sharp cheddar and 1 tsp. coarse ground black pepper.

    I let it sit a bit then into the YS640 @ 230 degrees with some alder wood pellets slow burning away. 2 hours 5 minutes later I built this damn sexy burger.

    I guess they were good because my son ate two then headed back out for number three after a couple hours. Thanks for viewing!

    Ingredients

    6 - 6.5 80/20 Ground Beef
    3/4 Lbs. Cubed Sharp Cheddar Cheese
    8 oz. Baby Bella Crimini Mushrooms
    1 Anaheim Pepper (chopped)
    4 Large AA Eggs
    1/2 Stick No Salt Butter
    1/2 Cup Worcestershire Sauce (Reduced Sodium)
    1/3 Cup Chopped Red Onion
    1 Tsp. Coarse Ground Black Pepper
    1 Tbsp. Minced Garlic
    1 Tbsp. Chili Powder
    1 Tbsp. Finely Chopped Rosemary

    Condiments and Buns of your choosing.

    Oh Man!

    Thats some fine burgering Rob! What did you think of the Alder? Seems like the only thing we see Alder on is fish around here....... I would take a tomato sliced on mine I dont think I could finish a "Rob Burger"

      Scott, it's funny, I used to use it allot years ago since alder is in such abundance here. I stopped cooking with it a while back and focused on other woods. I started using it again like 5 months ago when I did some salmon and have been digging it ever since. I need to do a Brisket and some more salmon with it soon.
      Smoke it.. and they will come!

          Brisket with Alder sounds interesting...... ..... There was a place in Aberdeen, aboot a year ago, that did all there BBQ over Alder. They have since closed, and I didn't get a chance to stop in.... I like me some Alder

                excellent job

                have to admit when ever I see them on the telly adding raw onions to burgers I have to wonder why they don't cook them first.
