  • T-H's Cowboy Beans & Hot Water Cornbread..

    Since firing up the smoker was not a option this weekend... I seen RS's Smoked Refried Beans. A old recipe I have not made in 5 years came to mind... My Cowboy Beans..


    The recipe normally I use venison for the meat, but digging in the freezer I found a nice hunk of smoked brisket point in vac packet..



    Items you will need....

    2 cups or 1 pound pinto beans
    1/2 lb. Ground or cubed venison (Or 2 Cups 1/2"x1/2" Smoked Brisket)
    1 8oz. Can Tomato Sauce
    4 Slices chopped bacon (Fat reserved)
    1 Med. Chopped white onion
    6 Cups water
    1 TBS salt
    2 Cloves Garlic, sliced thin
    1 TBS chili powder
    1/2 Tsp Cumin
    1/4 Tsp Oregano



    Soak the beans overnight or for 5-8 hours... Drain and wash.. Fill back with water and bring to a boil... Shut off heat and let set for 30 minutes... Drain and fill again... Keep the water no more than 2" above the beans..









    As the beans are cooking.... Take the reserved bacon fat heat to cooking temp and add all the spices, garlic and onion, sauté onions until translucent... Add a little water if it becomes like paste...






    When you get the seasonings to a smooth texture (About 10 minutes)... add it to the beans along with the tomato sauce, stir well.. Then add the meat and bacon..... Add water if needed.. Cover and simmer for about a hour...


    When the beans become thick again and the meat is tender.. Time to serve..



    It dont get any better than Cowboy Beans and Hot Water Cornbread...

    Mmm too bad I'm the only one here that eats bean anything- sigh. But...what the heck is "hot water cornbread"?

      Kinda a peasant food of the South.. This is a simple recipe that my Grandma used and I have loved it since I was a kid..


      1 Cup Corn Meal

      1/4 Cup Flour

      1/2 Tsp Salt

      1/2 Tsp Sugar

      2 Cups Boiling Water

      Oil to cook in..


      Mix the dry ingredients together... Add boiling water little at a time till you have a firm sticky base... Let cool for 10 minutes as your oil gets hot... I mean hot... 400* +... Take a half hand full and flatten out in a 3/4" patty... Fry in oil for 2 - 2.5 minutes a side... Drain on paper towels or rack ... They should be nice and golden brown.... Crispy on the outside and soft on the inside..


      I like adding some pickled jalapenos... to the mix... Really brings these to life..

          Ken those beans I have just added to the proverbial list for sure.. Hey Ry maybe for Labor day we can add these to the menu??

            Great looking beans! I'm with Rich, the only one here that eats beans. That doesn't deter me though. When I make a big batch, I just freeze what I can't eat in a couple of days.

              Even a northern guy like me makes hot water cornbread, although I bake mine. I will have to give the fried recipe a try It does look like a treat.

                Ken, beans look and sound great and I've never heard of hot water corn bread either but will sure give it a try.

                  Yes thank you Ken for sharing. The beans look tasty. My family eats what the hell I put on their plate.......lol No really we all like beans and the corn bread looks great! I think that would be a nice addition to the Labor day cook out, Kelly. I to believe the japs would need to be added.

                    hot water cornbread is like a big hush puppy for cowboys. really variable with seasoning to suit your own tastes. I added Smitty's once instead of chili powder. Now they are called Dad's "hot" cakes!
