  • First leg of lamb

    Xmas eve supper decided to try lamb, we've jade blade steak in a stew before but not the better cuts. Got a 5 lb boneless. Put it in a marinade Monday night
    1/2c orange juice
    1c dry white wine
    3 garlic cloves minced
    1t dried thyme
    1t dried rosemary
    1/4t black pepper
    Out of the marinade and getting seared

    Smoked with pear @320 and took to IT of 133. Made up some hot bacon dressing for a spinach, red onion, mushroom salad. Also made some cheesy potatoes. Made a gravy out of the drippings.

    Absolutely loved it! Wasn't gamey like I thought it might be. The wife said it was alright, probably didn't help every time she took a bite I said baaaa! Nolan even ate some.

            LOL... Ahhh kids. Lamb is supposed to be rare I hear. The few times I have had it...it was so. And good. Never smoked any. To Do.

                  not sure about the orange juice in that marinade but everything else looks fine

                  lamb tastes like lamb
                  people over there do seem to have some really weird ideas about lamb.
                  Wonder if the cattlemen's association are still spreading nefarious rumours

                  I mean the thing about game is that game doesn't taste 'gamey' unless it's old and starting to rot.
                  In the old days they'd hang a pheasant by it's tail feathers until they fell out. By that time you'd have maggots and green bits and all manner of crap.
                  If you gut and skin them while fresh, pheasant doesn't have a gamey taste. neither does fresh venison, rabbit, pigeon etc.

                  Old meat of any kind tastes 'gamey' because those are flavour compounds produced by the break down of meat by decomposition bacteria and oxidation.

                  No fresh meat will ever taste gamey.

                  Glad you enjoyed your lamb ryan - though not sure it helps with nolan's diet - isn't lamb even more expensive than the beef he likes ?
