  • Chicken Tortilla Soup

    With the uncommon cold temps in the south decided to cook some soup. This is one of my favorites. Not the best plated photo. Guess I need to start using a real camera vs the crappy cell ph camera.

          Oh yeah love that soup.. I have a version that is a bit different... Will post it next time I make it.. It is a cream base tortilla soup..

              Here's the recipe I use.
              1 whole chicken
              2-3 cups chicken broth
              1 can beef broth
              1 can cream of chicken soup
              1 small onion, chopped
              1 bell pepper, chopped
              1 can fire roasted tomatoes
              1 (4 oz) can chopped green chilies, optional
              6 tomatillos, husked
              4 cloves garlic, finely minced
              2 bay leaves
              1/2 tablespoon chili powder, or more to taste
              1 teaspoon cumin
              1 to 2 tablespoons Masa
              1 tablespoon Worcestershire sauce, optional
              black pepper, salt & pepper to taste
              1/4 cup fresh parsley, chopped
              Shredded pepper jack cheese
              Avocado, diced

              1.Add 4-6 cups of water to large pot. Add one onion (quartered), two garlic cloves, two bay leaves, 1 tablespoon sea or kosher salt, 1/2 tablespoon pepper and bring to a boil. Add the whole chicken. Add enough water to cover. Cover and bring to a boil and cook 45 minutes. Remove from pot and set aside.
              2.Combine the chicken broth, beef broth, tomatillos, garlic cloves, onion, bell pepper, chili powder, green chilies, & cumin in large saucepan and simmer until vegetables are tender, approximately 20 minutes.
              3.Puree the soup mixture in a food processor. Return to the saucepan and add the tomatoes, parsley, cream of chicken soup, Masa and chicken. Simmer on low for 30 minutes. Adjust seasoning to taste.
              4.Ladle soup into bowls. Top with tortilla strips, cheese, avocado.

                Oh yeah. Sounds awesome right now. Soup is a fine cold weather meal.

                I made a tortilla soup years ago. Don't remember what I all put in it. It was good and the boys loved it. That's what was important at the time. Thanks for posting the recipe.

                  By far one of my favorite soups!!! I love your recipe too. I have a cheat recipe that works in a pinch but not near as good as yours look!!

                    IMO the tomatillo's makes the whole dish. Problem is they are sometimes hard to fine. Tried growing some two years ago but could not get them past the sprouting stage. Will give them another try this year along with a few peppers.
