  • Cold smoke generator question

    I recently made a cold smoke generator from 2 coffee cans I goggled the plans . Although it works well I feel it isn't enough for my smoker. My smoker is called a 100 # and it is the size of a large upright freezer. I did a search and found a commercial made unit from Smoke Daddy called the Big Kahuna , Anyone have a good or bad comments of any experience with these units ??

    I had Smoke Daddy and was not happy with it, I sold it to a forum member here at Smoked-Meat that is very happy with it. My wife's uncle has one and is also very happy with his.

    About 4 1/2 years ago I started using a maze style smoke generator from A-MAZE-N Products which to this day am very happy with and over time they have come out with a tube style smoke generator which works well for us also.

    About 2 years ago my wife and I became distributors for A-MAZE-N Products with their smoke generators and if you are interested they are available on our Owens BBQ website.

    Not trying to steer you away from the Smoke Daddy, just mentioning another option to consider; hopefully someone with more Smoke Daddy experience will post soon.

      +1 to Marty's post above - it's A-MAZE-N all the way for me - no need to re-invent the wheel.

        I have a big Kahuna and use the hell out of it. I have found as with most things you ask for an opinion on the internet, you will get varying responses. I have never used an amazin smoker so I have no opinion on how they work. But I have had my smoke daddy for 4 years and it still works just fine for me.

          I know there are a handful of guys on this forum who like it.

          The Big Kahuna was the first cold smoker I ever had. I think it is a POS. No matter what fuel I put in, it was either smoking too heavy, or stopping. Then I'd have to ram a big screwdriver into it to bust up the tar that was keeping the fuel out of the fire.
          Then it would take a long soak, and a lot of scrubbing with a scotch pad, after every smoke, to get the tar & creosote out of it. Worst $100 I ever wasted!

          Then the AMNS came out (using sawdust), which was totally awesome for any smoker temp under 200*. Then the AMNPS came out (using dust or pellets). That one is awesome with pellets, and has no problem with temps up to at least 275* (my smoker's Max).
          I can light the AMNPS with Hickory pellets, put it in my MES 40, and not touch it, while I get up to 12 hours of Perfect, constant, continuous smoke!!!
          Made smoking soooo easy!!!
          Then the AMNTS came out, which is great for bigger smokers.

          I would never part with my AMNPS or my AMNS.

            any pics of your smoke generator ?

            Also you might be having air flow issues.
            Though that depends o how your current smoke generator works.

            So link and details please also details on where you place it in the smoker and any pics of the sir intakes and outlets on your smoker.

            You really don't need much smoke and usually it can be regulated with air flow.

            If you want to make something that really works, check out the smokevark, basically the amaze-n smoker is a scaled down version. I did make mine before tod released his, so i can say it that way round :-)

            Mine also runs longer and kicks out more smoke, or less if you want it to.

            But what we really need are more details on your smoke air flow setup.

              Guys like Bearcarver and Scarbelly were testing the sawdust versions in December 2009

              You posted a knock off on SM a year+ later

                  Same here. I use the hell out of mine. I also have an AMNTS (tube smoker) and it works well too.

                    I built a Smoke Daddy clone and hate it. I have to fiddle with it constantly to get it right. And I'm someone that likes to build and fiddle with things. I have an Amaz-N smoker, and it has worked very well, but does require adequate airflow in the smoke chamber. A very simple device that works very well with out using electricity. For most things I just use the hotplate and chip pan in my side box smoke generator ducted to my freezer conversion.

                      To me, that's one of the best things about it, right there.... you do need to be mindful of airflow, but the fact of the matter is that we should all be paying close attention to airflow anyway, right?

                        There are 2 versions of the Smoke Daddy. Version one pushed air through the bottom, and the current version pushes air through the side.

                        I have a clone of version one and will be updating it to see if there are any improvements. If not I will continue to use my sawdust smoker I got from Todd.

                        In my opinion it builds up too much creosote and if you dont clean it when you are done (not the next day) it is just easier to get a new connecting pipe. You also have to use a small torch to get the lid off if the creosote hardens.

                        You will never get thin blue smoke from one. Its more like white billowy.

                          I been saying it's a bad idea gone wrong for years. Some persist.. obvoiusly never tasting what a sweet cold smoke can be.

                            I would disagree with you on that, I am able to get a thin blue smoke out of mine all of the time. I have learned that I do not need the pump, I usually get it started and then let it run on its own. I have never cleaned mine. It does get a build up after a while. But I just heat it up with a torch and scrape it off and it is good to go.

                              lmao - seriously you guys are so thin skinned and ready to leap to odd conclusions.

                              I am not saying todd copied me - on the contrary, I remember a bunch of emails between us where we discussed various burn paths at the time - pretty sure we came to the same solution pretty close together. Particularly about how to stop the burn from going sideways.

                              I actually got most of my inspiration from another commercial cold smoke generator entirely - it was just nowhere near big enough or long enough burning for anything but weber sized enclosure.

                              That and spotting a cutlery tray in a local shop are why i made what I made, how I made it.

                              And i did make my big one before todd started selling his - that's a completely unrelated fact, patents ? who the hell mentioned patents or gives a rat's arse ? Are you guys so letigious that you believe everyone is out to get you or what - seriously what's the big deal

                              I think you'll find I always recommend todds device alongside showing people how to make their own if they want to.
                              What's wrong with that ?

                              Having looked into it - it's just not practical to commercially produce a smokevark - too much manual labour, todds design is the best way to go for value for money, mass production.
                              I'm sure I've said that on more than one occasion as well.

                              But if you want to make your own - you can make a longer burning higher smoke volume, cold smoke generator very easily using my design.
                              Again - that's just the facts.
