Been a while since I posted but have a question on smoking jerky. I made up a 7 Lb. batch of venison jerky using Hi Mountains mix. Followed the instructions to a tee.
My question is on the best temperature to cure it on my smoker. I can go as low as 120* but Hi Mountains guide says to smoke it at 200*. After reading some of the posts here, I am confused as to what is the best temp to go with.
I have it in the smoker right now and have my temp set at 150* with the smoke on {AMPS]- [Gas smoker}.
I will post some pictures later but want to make sure I have something to take a picture of.
Any thoughts on this?
