  • Some Crab Stuffed Salmon

    I make this a lot, it's one of my favorites.

    Made some crab stuffing, crab meat, minced scallions, garlic, parsley, lemon pepper...



    trimmed the salmon a bit (smoked the trimmings for snacking)




    made slits for the lemon slices...



    made slits for the crab stuffing...



    lightly sprinkled with Tatonka Dust...



    into the Memphis Pro...



    Started out low... smoked with apple. After about 20 minutes I upped the temp to 325F for the rest of the cook.



    smoked a pan of rice on the top shelf. I love smoked rice.





    didn't time the salmon, I just watch for the juices to rise...





    cranked the heat up to grill the asparagus...





    Supper...

    the crab stuffed salmon, smokey rice and grilled asparagus..











    That's about it, I liked it again.

              Outstanding looking meal Jeannie

              Salmon is one of my favorites...here's some salmon to start off the day.

              Was the lemon overpowering at all, or just a nice compliment? I'll almost certainly do something close to this soon...thanks for the inspiration!

                          Nothing short of sensational Jeanie.

                              Thanks for the kind comments. I've made this before but this was the first time using a light sprinkle of Tatonka Dust. Really liked the flavor it added.

                              Thank you Hoser, the lemon pepper is light, just compliments the fish. There really isn't a set recipe for the crab stuffing, I just use snow crab leg meat and doctor it up with green onions, parsley and seasonings. I bet many dry rubs would be tasty in the mix if they aren't too salty.
