  • Stuffed Onions in the DO

    I like to make these when camping. Not sure why I don't make them at home, they are one of my favorites.



    I line the bottom of the pot with cubed tatoes, cover them with beef stock..



    cut some big onions in half, remove the centers, save for another cook. Leave a couple of rings of onions.



    made the stuffing. It's basically a meat loaf mixture.





    stuff the onions and sprinkle the tops with a dry seasoned bread crumb..





    into the tractor tire rim...shovel some hot coals on top...






    they're done in about 35 to 40 minutes..






    the centers are moist and tender and the bread crumbs give them a nice crunch.





    they're one of my favorites to make when camping.

        These are another thing I can wrap and freeze for later meals. Handy for me to have around. (for when I'm too lazy to cook!)

                Those are awesome Jeanie! I'm am so ripping that idea off(with proper credits rendered the you of course) But more importantly you just gave me the idea to stick my DO down into my SM Grill pit whilst grilling everything else. Can't believe I never thought of that. Course I haven't used my camp DO for about 10 years, so mebee that's it.
