  • Smelt?

    I brought some smelt home from the fish market and do not know the best way to cook them.
    Anyone have a recipe they could share?
    These are cleaned and frozen.

    Use them as bait and catch yourself a big pike... Much better eating....

          They are common around WA when they run. Most guys smoke them, but I never really cared for them smoked. Maybe fried? Canned?

            If you ever do catch yourself a pike, be sure you are with someone who knows how to take the Y bones out. Otherwise they are very bony. However they are boneless and just as good eating as walleye if you take the Y bones out. Catching them in COLD water also makes them taste much better. If you don't know anyone who knows how to clean them, there are plenty of youtube videos and diagrams out on the web.

              I remember going with dad as a kid and watching him dip 'em by the net full from river. I don't ever remember eating them though, I think we just used them for bait.

                Thanks for the info Fishawn! It sounds like not too many people like them...are they too "fishy" tasting?

                    Maybe it was my uncles smoking them, while drinking?
                    Just kinda fishy and leathery as I recall, been aboot 15 years since I last tried one. They eat em like popcorn, bones, head, fins, etc. I did also, just didn't like them that well.

                      Smelt are usually breaded and fried, Jeanie. They're not fishy tasting at all.

                      In the Great Lakes it's sort of a rite of spring. The smelt run in April, and are fished for at night with nets and trolley lines. Most smelt fishermen prepare them right on the pier or beach---it's part of the total experience.

                      As to cleaning the pikes (i.e., pickerel, Northern pike, and muisky), it's not difficult. Just different than fileting other fish. For complete instructions, see my fish & seafood fabrication thread over at Foods of the World.

                        Out here in New England smelts are very popular Jeanie...the Portuguese often serve then fried, then tossed in a sauce with bannana peppers and olives...much the same way calimari is often served.

                          What sort of size are they?
                          Are they super small fish or a bit more mature?
                          Google white bait fritters and if they are small small happy days!
                          Get a new Zealand recipient for them though

                              Never smoked them, butt believe me, fried is the way to go.
