  • My New Adventure

    I bought a case of Colorado peaches from a truck in a parking lot and brought them home. Didn't have time to can them, so I froze them whole. Really wanted to try something that I haven't really done, so put Craig on the online gig and he found a grilled peach cobbler in CI. Here are the results.



    Thawed frozen peaches, skins came right off, 1/2 them, pit, and slice.
    Mix with goodies and put in fridge for flavors to meld.
    Grease CI with unsalted butter.




    On indirect on Weber, lid temp. at 350 for 45 minutes.
    Made dough. Here is where I need help. I don't do pastry or bread because I have no counter space, so when they said add enough buttermilk to form a soft dough, I was clueless. My dough ended up soft, but sort of sticky, so I kinda' had to glop it on and smooth it out as best I could. Any help here would be appreciated.




    Finished. Sticky dough or not, this stuff turned out great! Craig even ate it and enjoyed! He's not much of a dessert eater. Another reason why I don't do desserts much.

    He hit it again after he got home later the same night.



    All-in-all, not a bad first try. Definitely doing this again! Thank goodness, I have a case of peaches in the freezer! Only thing I will change is more peach to crust ratio. Certainly thought it needed more peaches. Also, hoping to hear from you cobbler crust experts. The crust was good, but I'm not sure if it turned out the way it was supposed to.

        I'd eat that and I am a dessert person (and starters and main courses)

        You might find a crumble topping is easier than a cobbler.
        One bowl, no liquids, quick mix and you can add all sorts of flavours.

        here's something else to do with your peaches

            I'm not a dessert person either, but I'm not gonna pass up a taste of something homemade. Especially when fruit is involved.
            Looks great to me Lena. Kudos for the CI cook as well!

              I lobbied long and hard to get some habanero into the peach mixture...But was shut down...Always the same ol story...Gotta fix it the first time according to the recipe...

              And Ill be damned if it wasn't real good without the peppers...

              Im sure habs and peaches are in my future...

                    Looks good from here! Some cobbler's use just a box of yellow cake mix. If not doing a crumble that's the route I go. I wanna say you just sprinkle it on top. I'll check my recipe.

                    Craig-habs and peaches go great together. We got a local company that makes a great spread with those to. It goes great on cream cheese with crackers. Its sorta like a jelly. If you got a HyVee down there they might carry it.

                        Craig has convinced me to do many desserts with habs or hot pepper powders of many varieties that he smokes and dries. He made habanero homemade ice cream once that was awesome, but I could only eat a few bites. Haha! He ended up taking that to work where everyone loved it a gobbled it right down.

                        I love the crumble because it's good and easy. But I tried to get out of my comfort zone a little here. My first intention was to do a crumble, but cobbler sounded more adventurous.

                              OMG! Lena, I'd be all over that. Back in the day my mom would always make deserts like this. Cobbler, upside down cakes with peaches or pineapple. I miss those kinds of deserts. Nicely done!
