  • Some Ham, Grits n Redeye Gravy

    Spent last week camping and this was one of the breakfasts.

    Fired up some wood in the tractor rim...





    started my pot of grits first....



    made a batch of skillet biscuits... they're baking powder biscuits. I like cooking them in the skillet sometimes. Brown both sides and let them sit to the side of the heat to finish rising and baking. I make these in the smoker too.









    fried the ham steaks in bacon drippings, then let them hang out on the side to catch some smoke...
    melted butter in a skillet for the eggs.



    made my redeye gravy with the ham and bacon drippings and a strong bit of coffee...also butter, a little beef stock and seasonings







    spooned hot butter over the eggs to set the tops and called er good.







    A ham, grits, redeye gravy, biscuit and egg breakfast....



    I really loved the hot biscuits, had a nice smoky flavor..





    Enjoyed the week of camping. The weather wasn't half bad and the fish were biting. :)

      "Butter over the eggs to set the yolks"... interesting..never heard of that. I'll add a dash of water and cover them (steam) to do that. Gotta try the butter thing. Actually I need to wrangle an invite and let you show me how...even better! ;{)

                    Rich I use the steam method at home but seem to prefer butter basting on the fire. Not sure why but I like it. lol
                    Definitely invited to any of my campouts. Would love to sit by the fire and share a drink or two with ya.

                      Sam thank you! I seem to be on a grit kick lately, can't get enough of them. The gravy was a nice addition for a change.

                        As soon as I saw the title of this thread, I just knew it was you jeanie! Beautiful cook as always! I love the grits and red eye gravy combo, and the butter over the eggs is a great idea...

                          That's a perfect looking breakfast for a fishing camp out. Cup of coffee with a double shot of Buttershots and I'd be set to go.
