Just made a big pot of poor man's jambalaya. Took some sausage(brauts, some bulk spicy italian), smoked chicken thighs, onions, garlic, ro-tel, black beans, pinto beans, MHGP and brown rice. Cooked it in the big old CI dutch oven. I am set for the weekend.

It's the stock-up weekend, so going to Sams, Costco, and a couple other places. Most likely seafood or steaks, something quick and easy.

What sort of dietary restrictions you on? Perhaps we can offer up some palatable offerings.....

Very low fat...no fried food...or hard to digest stuff. Been eating chicken noodle soup..I made it. Very good. All types of salads...have been good as well... I did eat a slice of pizza last night... Was very good.. Roasted onion red peppers and sun dried tomato with a merlow parm. Cheese... Did a low fat broc. And cheese soup... Was okay...

Nothing spicy as well... That is tough...I love hot sauce.... The good part I guess is I am shedding pounds like an animal sheds in the spring.. Down 15 pounds in 2 plus weeks as well... That is not good either... At least that fast... Going to doc on Tuesday... Was a bit over 3 bills...hit 290 this morning... Would like to get to 250s.. But not this fast....

Good to hear about the loss. Google some Japanese recipes. Something as simple as soup, takes on a whole new level when done with Asian flavors. Japanese foods tend to have clean bright flavors, with few ingredients, and usually feature low fat meats like chicken, fish, and "ahem" tofu..... and, you can still grill things like yakatori, etc....

Keep on it and stay healthy Brian! What IC said, very true. Explore that territory... (except maybe the tofu...)
