This has been a WIP the past couple of days.... now photophuckitup is not working properly... been trying to upload photos since 9 am so I am uploading directly from my puter... so bare with me.
Anyhow - I am starting with these little jewels - every time I have Armenian food or Persian food there is one particular flavor I could never figure out what spice it was, then viola one of my Armenian friends says I know what it is, and she brought me a bag full of these dried lemons! That was it. They have a distinct flavor once rehydrated, they are very unique.
These went into my brine, along with garlic salt, kosher salt, rosemary and oregano. Once the salt was dissolved and the lemons were rehydrated, I let it cool then added some Greek yoghurt. Having recently read an article about the effects of dairy product as far as tenderizers for meat.
I found a small leg o' lamb at a fairly decent price figured I would cook it on the SMG over oak.
I did not add any other seasonings after It was pulled from the brine, it just went straight to the grill.
It came out very tasty need zero seasoning, I have no plated photos sorry - had family over and no time to take a photo of anyone's plate!
I was looking forward to leftovers for shepherds pie, but there were none!
