              It's on Wutang! Chuckie took a bath in da gig ! Overnight with the Southwest stuff on top. When I pulled the lid it smelled awesome.
              In at the med rack, target temp 160. Had a stall at 139 busted it & another at 150, hit 160 pulled & in a roaster pan.


              Just a mug of me....The plywood smoker works great. I'll get pics.

                Looks real nice. I hope you are gonna show us the finished pic of the beef.

                Good looking smoker. I would think about moving that wall probe down to grate level to get as accurate a reading as possible.What temp did you smoke it at anyways?

                    Man thanks! Got 3 racks in there & I need to put that probe at each level, or at least drill a hole for it. Stayed constant at 225 It holds heat & maintains temp. Used hickory.

                            Good deal, I figured ya had it covered.Have ya ever had the temps higher. I guess I am askin whats the hottest you have had that rig?
