  • Cured BB Ribs with pics

    been a while since i last posted but being i started some canadian bacon, and i had this last 3 pak of ribs from a case i had boughten a little while back. i thought i would try curing them with tenderquick. i pulled the membrane off. the total package weight was 3.83 lbs so at 1 Tablesoon per pound i used a lil more than 1 and 1/3 tablespoons per rack. on the bone side i spread out a teaspoon and rubbed it in and the remainder went on the meat side. after 12 hours i rinsed off and took a piece off the end and microwaved it til it was cooked just so i could taste it to ck salt level. was good so i took the basic rub i usually use and made some up with out salt, figured the salt in the tenderquick be good enough and with a little mustard slather applied the rub and let set overnight.
    here we are ready to go to smoker.


    after 2 hours ready for foil.


    and here we are after 1.5 hours in foil. i added some apple juice while in foil.


    about 1 hour later...


    brushed on a couple layers of sweet baby rays chipolte.


    here we are with garden food, cucumbers and cream over fresh boiled taters and butter, a lil smoked cabbage, and the ribs.


    close up of the ribs showing cure penetration. they were really hammy tasting!!! was a good mix with the sauce.

    ahhhhhhhhhhhhhhh....................dude.......... ........why would you CURE ribs? Just curious...........

    they look good tho........getting ready to sauce mine...........

              Im with the walkin guy on this one...Why would you do that to good back ribs??? I mean if you want ham...buy ham...

                        Look at it this way, if you don't think outside the box every so often, you'd never discover new things. That applies to everything.

                        Think about it. Some lazy azz decided he was tired of getting up to change the channel and the vol on the TV years ago (the older folks such as myself remember those days, especailly as a kid....Dad always had us doing the running but that's another story). Yet, someone found enough energy to figure out a way to expend less energy. Pretty ironic but still a great invention. Personally, I'm glad that person did

                        I just look at all the stuff that gets passed around here and how it's done. It just amazes me that it was ever thought of in the first place (sausage, brining, smoking, curing, etc). Pretty amazing when you stop and think about it.

                        Who was the guy who figured it was a good idea to bury a pig in the sand with a bunch of hot rocks and palm leaves and then wait for hours on end while the rest of the tribe says, WTF, we're hungry now . That guy had some stones IMO and was lucky to live through the night.

                          Yeah yeah yeah....
                          I once was makin a tater tot casserole (a favorite of some around here) and I decided that it could use some changing up. Wellllll....after that I was set straight! You dont mess with the classics...or something like that...Geez! Im sorry!.............. Even though it was way better my way...it aint happening again...

                          Well I guess thats where Im coming from...

                            well i didnt want to start a controversy here, sheesh... if i was to use your thought process i woulld ask these questions... why would you take a perfectly good potato and make it into a tater tot, and then why would you take a perfectly good tater tot and mix it with other stuff to make a hot dish??? and then even you tried to change it up... and then to top it off your saying it was better???? and it aint happening again???? i knew there was a reason you still drove chevy. even if you know something is better, it aint happening.

                              Damn, Very well spoken Erain. Hell I like to try new things and I think they look awsome. I will have to try this sometime soon Good Job Erain Funny; no one seems to have a prob eatin bacon. LOL
