    Everybody wants to get into the act. Being an equal opportunity kind of guy I thought, why not... deboned a butt and into the cure it went.

    The thickness of the pork was a little greater than the beef but no matter. I won't be able to get back to these for a couple weeks anyhow.

            No,, not ham. Ham comes from the hind leg of a pig. This was from the upper front shoulder section, namley the butt. In essence corned pork, following up with a pastrami recipe. All the same, yeah, I believe it will be good though.

                  I gave my pickles a pick & a poke this weekend. The should be ready for smoking in a couple days but alass, I'll be working.

                  When I return next weekend, I'll smoke em up and maybe steam out the lats for some Sammies. The looked like the cure is taking nicely. nice smell firm feel.

                    i guess this must be a wet cure.............i have only done dry cured pastrami.........this is going to be interesting............

                        I only added enough water to get the spices to flow over the meat. 1/2 cup was all that each bag got so,, while it was a wet cure, it sopped right into the meat nice & quick. I added some turbinado sugar to each bag over the weekend, cept for the vac bags. I was thinkin though its an after thought it may prevent the meat from tasting too salty.

                        It shouldn't be too salty though, I only used 1Tbs per pound (TQ)
