    My precious lady canned 30 quarts of 'Purple Pole beans', a fantastic flavored green bean. They turn green when cooked.

    Having a large turnout this weekend with lots of smoked goodies and was thinking of something our of the norm and try to smoke some vegetables.

    Has anyone smoked green beans or asparagus ?

    would appreciate what woods to use, I have apple and maple for light flavor, and hickory, oak and mesquite for heavier. How long and at what temp would you suggest ?

    Same question on the asparagus please. Is it generally well received or do you have to develop a taste for it ?

    Trying to think outside of the box for a fun thing to try.

    Both are good in conjunction with bacon flavor- sooo perhaps this might be OK. Problem being is they are gonna dry out. I would consider making a cream type sauce and after a par-boil or quick fry with bacon, putting the pan into the smoker for a while, mixing the contents a couple times.

      Yeah, nothin like a little dollop of bacon fat in the green bean pot or a pot of greens.

        Well I kinda agree with Rich about drying out but there are other ways to get smoke flavor into a dish without smoking the principle ingredients. One suggestion with bacon already made and if ya smoke your own bacon or sausage that would be the route I would take. We love greenbeans, new tators and sausage all in one pot in this house.

          I used to grill beans and asperagus. Its not smoked but its not bad. Some oil and a hot fire and they are done in no time...and not dried out in the least.

            The only way I've smoked asparagus was wrapped in bacon with parmesan cheese inside. Really good, but time consuming and not the best for a crowd.

            Not sure what kinda smoker you got, but I'm sure you could fix them any way you normally would. Only in the smoker. For instance, green bean casserole. (I hate it, btw.) It would take on some smoke if cooked in the smoker. Same applies if you put the veggies in an oven safe type pan or container with some butter. Uncovered they'd take on some smoke. Just cook them until desired tenderness. Give it a shot. Let us know how it turns out.
