  • Chicken Breast

    I have some breast marinating in some Mad Hunky Poultry brine. I usually cook leg quarters, thighs, drum sticks and wings...never breast. How does everyone usually do their breast. I'm on a diet so I will not be adding any fancy sweet sauces.

    I use Rich's brine all the time. Breasts always come out moist even off the grill. Just don't over cook them. If they are getting too charred then move them indirect until 165f. I don't rinse after the brine. Season of choice based on menu. Never been disappointed. Sometimes I'll do a big batch but with different flavors depending on what leftovers we have planned.

      Yup, brine and grill. I like to slice them up thin and spread over a Caesar salad. YUM.

          I think I'm going with the CI skillet. Raining and gloomy outside....and no beer on this diet......... When grilling or smoking I'm more comfortable with a beer in my hand.

              I do a big package of chicken breasts for my woman unit every few weeks. Brine with the MH poultry brine, and do them on the kettle indirect with apple wood chunks. Be careful not to overcook, and she just loves the hell out of them for sandwiches and salads.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.

                    Browned in ci and finished in oven till 165. Mad hunky brine kept it juicy and the MHgp was great for a little rub. Plated with mashed cauliflower and green beans. Not bad diet food,
