  • Gangrene Chicken Wings

We love these here at the Den. And be a hit at Viking fest.

two family packs of wings. [we do not like the jumbos, find they do not cook up as crispy]

I put the wing tip behind the drum to form a triangle if you will.

    4 bunches of cilantro
8 to 80 cloves of garlic
    one med. onion
    6 jalapenos
1 habanero [toss in more if you be a pepper head]
1 bottle of soy sauce [two cups]
two boxes of chicken broth [more if needed to cover wings]
put the above in blender and chop up well w/ soy sauce and broth

I have a large SS bowl, pour the liquid in and put all the wings in then cover and stick in fridg over night.

I use mesquite wood and try to get them crispy brown bout 30-40 mins.of course flippin them bout every ten mins.

    plate and enjoy

    ps

any thing with wings that lands close to the Den works well also.

so is the chicken or the cook the one with gangrene.
'cos no matter how good a recipe it looks - I'm buggered if I'm going to deliberately get gangrene just so I can cook it

Bill, great to see you back!

Sounds like a great recipe for the pepperheads

            P.S. Try Rich's brine, it's great.

Vortex would eliminate all that flippin '
