I stopped by Sams Club on the way home from work and picked up a couple packages of chuckies to turn into burnt ends. I coated one package in Just Add Beef, and the other in Tatonka Dust and left them sit overnight in the fridge.
At 0700 this morning I popped them in a preheated to 225°F MES with a tube full of hickory and pecan pellets. Now the hurry up and wait.
So, here they are after a tube full o' pellets. I pulled them at 180°F and cubed the meaty goodness. I gave them a coating of a modified Rudy's Clone that was thinned with some beer and returned to the smoker. I gave them 3 iterations of the sauce coatings about 40 minutes apart.
And the final at dinner time. The burnt ends along with some zucc "noodles" made for a great chow fest. Maybe the best part is I have 4.5 pounds of burnt ends leftover for lunch this week.
