So I been wanting to do this for a while...
I got no recipe to follow...As if I could anyway
But when has that ever slowed me down
Pulled out this boneless picnic roast that has been in my freezer forever...Bout 3.5 pounds...
Seasoned it with J.A.B. and followed that with a hot mex style rub I been working with...
Here it's been running at 300 degrees for two hours...140 IT...
Then I saute some red onion, garlic, and Serrano pepper in butter...
Add the roast and about a cup on chicken stock and some of the Mex rub...
And put the lid on the pot...
Run the temp up to about 350 for two more hours...
And at four hours total, IT was 207...
Roast comes in to get pulled and the "broth" goes on the indirect side with the lid off to simmer...
When the pork was pulled it got stirred back into the reduced broth...
With the lid on it stayed quite warm while the rest of the meal was cooked...
Which includes a pan of black beans with cheddar cheese...
And warmed tortillas...
And on the plate the tacos get dressed with some simple pico and cilantro...
All in all it was a great result for another "total experiment"...
