  • Cottage Pies using Buffalo Meat

    I didn't start off with the idea of doing these.
    My neighbor came over to the house carrying a small bag from the grocery store. She said here, I thought you might like this, if not throw it out. I asked why and she said she bought it by mistake. I looked inside and it was a pound of ground buffalo meat.
    I started thinking( I know, smoke cloud formed over my head ) not really enough for some big burgers, then the light-bulb went on. Make Cottage Pies.

    Browning the meat. Once done browning, drain, & set aside


    Sauteing the onion, minced garlic, celery, & green pepper til softened


    Add in some sweet peas and small diced carrots. Cook another 5 minutes


    Add back in the drained meat and mix everything together


    Added in some veggie stock, then dusted with flour, mixed everything, & then simmer til stock has thickened to desired consistency


    After the mixture has cooled a little, I filled the individual Ramekins with the mixture


    While the meat & veggie mixture was cooking I boiled some potatoes to make mashed potatoes
    Mixture in the Ramekins was topped off with the mashed potatoes and dusted with CBP


    One Ramekin was covered and put in the fridge for a lunch at a later date.
    The other two Ramekins had a large pat of butter put on top of the mashed potatoes, then covered with shredded Colby-jack cheese.
    The Ramekins were then put in a preheated oven to warm back up & melt the cheese


    Hot out of the oven

                        Very nicely done.
                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.
