  • Duck eggs

    Anyone eat them? Got one duck that started laying. It'd make my boy happy if I kept the ducks instead of turning them into smoked duck. Wife's cousin says they suck to eat when fried like a chicken egg but are great for baking. Curious if anyone has a use for them or special dishes using them.

    I haven't used or ate any in years(close to 50yrs). We raised them on the farm when I was a kid. They are very similar to a chicken egg in taste, but this depends on the duck's diet. We kept them in a pen and fed them chicken feed. If they run free and eat a lot of fish from lakes the eggs can have a strong off putting flavor when fried. I do remember GrandMa said they were the best eggs to use for baking. I also remember they were much richer tasting than chicken eggs. Not much help, but that's about all I remember about them.

      I have had duck eggs and turkey eggs, both are great. Turkey eggs being much larger and are good. Two of those with good sausage and toast! Yum.

        Honestly, it really depends on what kind of ducks you have and what their diet is.

          We've got pekin ducks. For the time being they're eating a commercial all poultry feed. As soon as turkeys, roosters, and a few ducks go to the processor, they'll be switched over to a layer feed.

          I'll be trying one Sunday morning but I'm getting real anxious to try one.

            Never had Duck Eggs, but I love Duck more than Chicken!!

            Ran into a "Quack" at the hospital a few years ago----Wouldn't mind Frying Him!!!

              Didn't try one this morning. Wife made cheese steaks the other night and had left over meat, peppers, and onions. Made omelettes with fresh chicken eggs doing chores tonight and Nolan cracked the duck egg. Figured might as well cook it up. Cracked it open in the pan and it's a double yolker. Fried it up to over medium, I'm more of an over easy guy. The white part taste like a chicken egg. The yolk was a little different. Not sure if it was because it was over done, but the wife said it was different. She said she probably wouldn't eat it fried again. I probably would if we were out of chicken eggs. For now will use for baking or to sell. I've seen for sale for $4 a dozen. Now I'm going to research if double yolked eggs can produce 2 ducklings, not sure if there'd be enough room in the egg for twins or if it's even possible

                My mother swears by duck eggs in her cheese cake. It gives it a creamier taste imo

                  duck eggs are generally larger and tastier than chicken eggs with richer yolks - because ducks forage and most chicken eggs come from feed fed chickens.

                  Plus ducks are fun - keep the duck, eat the eggs

                  When my dad goes beating with dream, he specilises with getting shot ducks from the really thick weed and rush covered ponds that none of the other doigs can get into.
                  Last year dream apparently went into a thick bunch of weeds and came back with a live duck that had just been hiding, and no they didn't put it back
                  Stubborn little springer spaniel :-)

                  But, yep - love duck eggs.
                  Goose eggs are even better. One goose egg makes a really good sized omelette
