  • Greek Shrimp & Scallops on Seasoned Orzo

This is one of Pam's favorite meals.
My hands were giving me a fit, so not many pics of the cook.
Here's a link to my original post a while back which has all the pics and the recipe

    http://www.smoked-meat.com/forum/showthread.php?t=35644

I sauteed some minced garlic in EVOO, then added in the diced tomatoes, wine, and other spices. I let this cook down and thicken

Once the sauce has thickened, I layered the shrimp & scallops on top of the sauce and put the lid on

When the shrimp were almost done I turned off the heat and put a layer of crumpled Feta cheese over the shrimp & scallops, put the lid back on and let the cheese melt

A layer of seasoned orzo on the plate

Orzo smothered in the tomato sauce, shrimp, scallops & melted cheese

    Closer look

    Thanks for lookin'
    Jim

I love the looks of that. Unfortunately, I don't do a lot with shrimp (I love them...Mrs. Engineer not so much). I've got to change that. She'd be all over the scallop portion...I'd just take all of the shrimp!

I’d have to set aside the scallops. Allergy. And the feta. Personal. Maybe some fresh mozz? Or a grated Gouda? Damn that looks good. Never had anything like it. I need to.

It can be a wife and kids friendly meal or make it like I do with the extra crushed red pepper and white pepper.

I think the fresh mozz or a Gouda would be very good on it.
I think the mozz with some chopped basil would really shine.

I know some people don't care for the seasoned orzo which is a pasta.
I have served it over noodles and it is delicious.
This was served(just didn't get in a pic) with toasted garlic bread for dipping in the sauce.
