Enchiladas with Salsa Roja

[BYBBQ]

Made some salsa roja para enchiladas - red sauce


Made some fresh guacamole


Made a batch of fresh pico de gallo


Sauteed some diced peppers and onions


Browned some ground chuck and drained it, then added a little sauce, and the peppers & onions


A flour tortilla heated first, then added some meat mix, sprinkled with shredded Mexican 4 cheese blend, then rolled


Enchiladas placed in a baking dish with sauce poured on the bottom


Once dish was full, I poured the remaining sauce over the enchiladas, then covered them with shredded cheese


Hot out of a 400° oven


Enchiladas served with re-fried beans, sour cream, guacamole, and pico de gallo

Can't go wrong with a treat like that. We just finished off some chicken enchiladas I made the other day. No one seems to complain about the extra cheese sauce that I make. Leftovers are even better!
