Tonight's dinner is one of our favorite grilled salmon cooks. Collar steaks served with stuffed shells and yellow squash, sweet onion, & garlic sauteed in sweet cream butter
Steaks covered with a mix of Turbino sugar, light brown sugar, coarse sea salt, and a touch of ginger. Then into the fridge for about 4 hours
Steaks out of the fridge, excess mix shaken off, and a light dusting of CBP will be applied just before going on the grill.
Keg was setup with a grill pan and heated to 400° using RO lump and orange wood
Shells went on a few minutes before the steaks
Just before the steaks are done, I baste them a couple times with some melted butter with ginger & lime juice added in
Salmon collar steak and stuffed shell(both basted again with the melted butter mix before serving) and sauteed squash & onion
