  • Game Hens and Rice on the fire

    Another campfire meal.... sorry!

    I brined some game hens in water, kosher salt, cracked black pepper, red pepper flakes, onion and garlic.



    Crispied up some bacon in my cast iron pot...



    Sauteed some onion, green onions and garlic in the bacon drippings...



    added butter and chicken broth...then the rice...






    Spatchcocked the hens for even cooking...





    Had to move my rice.... to fry more bacon. (my crispy fried bacon disappeared)





    Added bacon and green onions to the rice....




    The birds weren't very pretty but they were moist and tasty!








    Note... this was not my plate! lol There is no way I could eat a whole game hen. I ate one hind quarter, some rice and cucs.

    Pretty or not, I'd take that plate and make one hell of a try at finishing it! Another fine looking campfire meal.

            Haha... I know I said this once before here and at some other place .. You can do more with a campfire and a few pots and pans than most chefs can in a commercial kitchens..

                  Hmmm. Looks like I just found a new way to do hens when we are camping! Those really look good Jeanie. We just take the whole bird, wrap in foil with mushrooms, salt, pep, and butter. Throw on the fire for an hr and they're done. Going to try your way for sure!

                    Ken, I'm not sure when I used my stove last....seems like I have been spending a lot of time outside this summer. lol

                    Sam... heck yeah! I'm always ready to go camping. The hens took about an hour. The rice finished first, and I just kept the pot on the low end of the fire to keep warm.
