    Hi ya'll... been a bit.... what should i do with this? Its small....

    Sliced real thin for beef sandwiches. Smoked a few hours to 130 ish IT.

      That is kinda my plan... but should I "do" anything to it? inject, rub, bacon wrap? I won this small piece of meat in a bar meat raffle... It cost me like $5.00 to win it LOL I don't want to ruin it. I don't usually cook things this small

              dUST IT WITH SALT PEPPER AND GARLIC POWDER AND SMOKE TO 130 slice for sandwich

                Rub it with EVO then rub on some coarse ground pepper, Sea Salt, onion powder, fresh minced garlic and rosemary. Slow cook it at 225 until 130-135...
                Smoke it.. and they will come!

                      I'd cook it to 130 and eat like a steak. Slice in 1/2" pieces for the family.

                        Watch your temps close when it gets over 110....seems sometimes those get to 130 pretty quick......just saying.....and they are no good at 150.......

                          If you have Mad Hunky's JAB dust it that then smoke it to 130 max. If you don't have smoke it anyway. Then thin slice, into pan with onions and peppers for the best cheese stake you will ever have
