  • Saturday morning brisky

    I had nice (very small) brisket calling my name from the garage freezer Thursday night so I pulled it out to thaw. Last night it received a dusting of JAB and T-dust for an overnight nap. My lonely whippet Conall was telling me that it was time to pee at about 5:45 so I got dressed and let him out and lit a fire in the little Okie Joe.
    It's turning into a gorgeous morning!

    Kent, you and Joe are gonna have a great day

    I like the way the lids on your 16 incher are flanged on the outside...On my old 20 inch Joe they are flanged on the inside and rain can get inside the firebox and the cook chamber...Oh well...It will cook a brisket just fine

        Since I haven't gotten a roof built over the patio yet I like that about it too. I assume it might be a little newer than your 20". A roof is in the plans but the cover from Horizon is doing a pretty good job of keeping it dry for now.

        Sitting at 158* now....looking good

          That Okie is EXACTLY the cooker I have on the Brinkmann Backroads trailer..cool! Brinkmann actually continued to make them for a while...

              I knew that was coming! Wish I could come down, to much work to do today. On a side note, I hit up the Asian Market off of 76&Dodge. They have cheap pork belly and looked better than what I got at Sam's. Next time I'm there I'm going to get one. I'll keep you informed on the quality.

                That little thing was only just over 6 lbs once it was trimmed. But it turned out pretty good.

                        Great post and a fine lookin' brisket.

                        Those beans don't look too shabby either!

                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.
