  • 1st Chicken smoke

    So did my first chicken smoke today. I took the advice and brined it overnight prior to smoking. And also took the advice of not using water in the pan I used balled up aluminum foil with a layer over it to catch the drippings. I used apple wood for the smoke and the end result was fantastic... at least for the most part. Visually it was exactly what I was expecting and was tender and juicy just falling off of the bone.

    The main issue was that my wife made the comment that the outer portion of the chicken had a "hot dog taste" but the inner portion of the breast tasted like chicken. Aster she said that I got a small hint of that flavor.

    Any idea what caused this?

    Perhaps just a tad much on the browning...?

    What was your brine?

      Congrats!! Birds look great! Hotdog taste? No idea... never experienced that.

        Kosher salt
        Black peppercorns
        Garlic cloves
        Thyme
        Cut oranges
        And some brown sugar

        We use something similar for turkey we do in the oven.

          Well..I don’t see any “hotdog” in that. Again..perhaps the heavy browning? But still.. good meal and job!

            Looks Great from here!!

            Nice Color!!

            Maybe some of the really dark brown & the blackened around the edges could give a kinda Hot Dog taste, but I'd probably like that !!

                Hmmm, not sure about the "hotdog" taste either, but my best guess is it brought back a memory from eating hot dogs grilled over charcoal.

                In any event, you did those birds well.

                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                My best asset however is the inspiration from the members on this forum.

                        I like the drunkin chicken method when doing that. Shove a half full can of beer with some spices thrown in with the beer up the chickens rear end where it stands up. It adds some spicy steam to the inside while it cooks. Pull the skin back and rub some butter all up in there can't never have enough of that. Could double fist them wings for sure.

                          Well... it's kinda like it sounds I guess. Like a hot dog. I can't think of a better way to describe it maybe it was the smoke that she was relating to the hotdog
