  • Ryteks Braunschweig liver sausage

    It's upon us, once again opening trout and fishing season is opening, all my uncles and friends coming for opening fish season.. I know they all like this recipe.
    I used Ryteks recipe but doubled the season up.
    I used beef liver because it's very available, but I only use 25% beef liver to pork or else it's to strong.
    So I did 10lbs. Stuffed into 38/42 hog casings. I wanted to smoke some, like Braunschweig, it turned out awesome...

    It's on my list for about a year now. Dad turned me onto to this stuff and really liked it. Have you tried Marianski recipe or just Ryteks? I've found Ryteks are usually bland but Marianski is usually spot on.

        Looks great, doubling up on Rytek is usually the route to go. Thanks for the tip on the percentage of beef liver.

        I am waiting for parts to a buffalo chopper so that I can get the true emulsify.

        That smoker looks huge.

        Have to throw out some sausage points.

          Great looking rings, never tried it with beef liver, so thanks for the 25% tip..

            No I haven't tried Marianski's recipe. I've been using this one for a couple years.

              It's left over sausage that's in the sausage stuffer and tube, I make patties, and it turns out like jerky...

                Me taste buds say yes lets give this a go.. My gout says hell no.. I am sure it is good, but may not be so good it's worth crippling me for 5-7 days..

                          I've got liver defrosting and want to make this. I looked at Ryteks recipe and he calls for pig snouts. Is that what you used? Or something else? I don't have snouts available.
