  • Smoked bologna

    Started off with a store bought chub my father asked for.


    But then he complained that it was too plain and not what my grandmother would have done.

    So.....(think I need a drink at this point)............

    I split and smoked the chub in hickory with a simple glaze. A little BBQ, Worcestershire, water, and juice from a jar of Japs. (Out of vinegar).

    Scored, smoked, glazed, etc. pics of sammies to follow

    Some days I think Bravo Zulu, other days it's more like Whiskey Tango Foxtrot...

            I have found the cheap store bought cubs like this are great for smoking.. Heavy smudge and let cool.. Vacuum seal for a few days in the fridge and then slice and vacuum seal in packs then freeze.. 1/2 slices for fried bologna sandwich is AWESOME!!!

                      Thanks all.

                      Sliced up half. Interesting taste. Got a little heat from the MHGP. Then a bit of sweetness from the glaze. Nice texture without being to "lunchmeat greasy" nor dry. Made some 1/2" thick slices but didn't get to prop up a sandwich as other dinner was ready. I'm thinking I'll sear up some for a Sammie later tonight. Thinking grilled cheese, fried bologna with some crisp lettuce and fresh tomato.

                            Don't know about that Craig. With all this damn rain you may not make it time. A couple of pontoons on the truck and you may be able to get to the border. Looks like we have more coming in tonight. I'll try to save some back for you along with a couple slices of white bread! like the good old days.
