  • Little Chief Smoked Salmon

    Here's today's project. Some smoked salmon in the Little Chief. This thing is a cheaply built cold smoker, but this particular one has been a cheap smoker for 30 some years, and it's still going strong. I can't even guess how much fish I've smoked in this thing. If it ever dies, I'll definitely replace it with another Little Chief. I'll post after pics when it's done.

          Happy to. Here it is.
          In 1 quart of water add 1/2 cup kosher salt, 1 cup brown sugar, 1/4 teaspoon garlic powder, 1/4 teaspoon liquid smoke, 1/4 teaspoon Lowreys season salt, 4 Tablespoons molasses.
          I soak it in that overnight, the put on a rack until the pelicle forms. They were in the smoker for about 5 hours. Here's a pic of the results.

                      Well here on the Iowa shores it's sort of hard to come by as well. I did this from a couple frozen filets from Hyvee. Probably safe to say not the best ever.
                      Before summer runs away I want get to Omaha where there is a really good fish market, but you're right, that will be spendy.

                        Well done sir. If you are ever in the need of a commercial brine, I HIGHLY recommend RichTee's brine. It was awesome! He sent me a sample of his fish and my son mowed through it in one setting. Really good balance of flavor. I don't have the means to do a quality cold smoke but always am jealous what folks post. nice work.
