  • 1/4 trs fer lunch!

    Smoked up 10 pounds a chicken 1/4 trs fer lunch's. My usuall brine cept I added in 4 Tbl a apple powder, taste is perty good!

          Here ya go:
          Slaughterhouse Poultry Brine By Tip Piper of Hillbilly Vittles
          1 ½ Gal Water
          ½ C Salt - Kosher
          ½ C Dark Brown Sugar
          2 tsp Garlic Powder
          2 tsp Onion Powder
          2 tsp Cajun Spice (Louisiana Cajun Seasoning)
          2 tsp Celery Seed

                  Here's the injection for things like turkey an my spritz which I use on everthing. The spritz does help give a crisper skin on birds at lower temps, not fried crisp, but does help an it gives great color an taste!

                  Slaughterhouse Poultry Injection
                  ½ Pkg Good Seasons Italian Dressing
                  2 tsp Garlic Powder
                  2 tsp Celery Seed
                  2 TBS melted Butter (non salted)
                  2 C Apple Cider

                  Slaughterhouse Spritz (Good fer everthin!)
                  8 oz Apple Cider
                  6 oz Water
                  4 oz Whiskey
                  2 oz Cider Vinegar

                      Are you heating this ? I know the powders (onion & garlic) Like to "lump" in cold water.

                        I use warm water, stir it up ta high speed with a wire whisk an start addin in the onion an garlic powders, never have much troubles with em that way.
