I did this London Broil a few weeks ago but was unable to post it. I smoked it with some Hickory and Orange wood.
I had a gallon jug of Mustard based BBQ sauce that I used for a marinade and rubbed it up with a few other things.
On the smoker for a few hours and mopped every hour with my Dr.Pepper and Apple Cider mixture.
Pulled it around 125° and foiled it and added the remainder of my mop for a braise.
Threw my EVOO rubbed taters on along with some bacon wrapped scallops and stuffed mushrooms on as well for a snack while the LB was cooking.
Then ate all the mushrooms and scallops, and nothing better than bacon wrapped scallops, they never made it inside.
Then threw the asparagus on the smoker along with a couple more naked scallops brushed with EVOO for side dishes.
Pulled the LB at 135° ish and sliced it up, it was very very tender.
Plated with all the sides and some Hollandaise Sauce. Everything was made on the smoker, not one items shown was made in the kitchen.
