  • Do you use your leftovers...

    With times as hard as they are we need to be conscious of waste. One way of doing so is to make sure you minimize wasted leftovers. What do you like to do with the left over meat and ingredients from your weekend smoke?

    For me the big left overs this weekend was an onion and cheese mixture from the abt's and pulled pork. Both of these were used to make smoked pork quesadillas. Add in some sliced tomato and avocado and a full meal is had.



    I like to stretch meals in this way to keep a single meal from getting old after having it over and over. Also it helps making dinner easy when you have food prepped and ready.

        Like you, my leftover main dishes usually become ingredients in a different dish.

          Tasty looking Quesadillioes, love the fresh Avocado touch.

          I made "roast beef hash" from my leftover London Broil and Baked Potatoes. Chopped up the LB really fine and diced the potatoes, threw them together in a skillet with some bacon fat and egg whites, salt-n-pepper. Good morning eating!!

            I had some leftover pulled pork the other day. Not quite enough for a sandwich, so I made a pulled pork omlette. Couple eggs folded over PP and swiss cheese. I should have dribbled a little bbq sauce in there, but it was quite excellent as it was.

              Nice quesadillas., Vlap! I never would have thought of using the ABT mixture for quesadillas.

                      Burritos. I make burritos out of almost anything edible. Hash browns, pulled pork, bacon, smoked brisket. Roll it up in a flour tortilla, add some cheese and cover with green chili. Yum.
