  • pecan smoked pork for chili verde

    1 little, 2 little, 3 little picnic roasts rubbed with some Wild Willies #-onderful rub. These little guys are about a pound each. the way they package them, they looked as one roast.

    Gonna smoke these over some pecan. pull them, then incorporate into a Chili Verde tonight!

    While I was at the races the fattie fairy rolled up this breakfast fattie.... In this fattie we have a breakfast casserole with scrambled eggs, zucchini, shrooms,bell peppers red and green,onion, cheese, and some ground sausage. Rolled in breakfast sausage with an open bacon weave. The weave skips every other piece both ways.

          Thank you guys, it smells so ...... good all together and on the stove.
          This is a first for me.

          This is the fattie after 3 hours on the top rack of the ecb, over pecan

          Foiled and rested 1 hour.

          The 3 little picnics after 3 hours bottom rack and 2 on the top rack over pecan.

          foiled at 160*, wrapped in towels and rested 1 hour. The recipe calls for cubed and not pulled...my bad....

          Added some of Kelly's pulled brisket along with the pork!

          In the pot and on the stove 2 1/2 hrs left to go! Shoulda bought green tomatoes, it aint green....lol

                  That is indeed my Gourmet Brinkman Walking Dude. Thank you Dawn and everyone else. The meal was sooo good, perfect spice and thickness. Drizzling here today= comfort food for me and my family!
                  We took it 3.5 hours and added a bit 'o corn meal and half and half. To thicken just a tad, about a half hour before serving.

                  In the bowl with a roll. This made about 6 quarts...left overs ya bud!! Thank you for checkin out my smokes!

                          The fattie faerie be a silly feller...he wears a hot pink Panama Jack half shirt, Lime green plaid kilt, those funny costume faerie wings and a hair band with bouncy stars. (not to be confused with Richard Simmons). Take the fatties just not the faerie to the track....lmao
