  • How long will homemade sauce last?

    Just curious, as I haven't been able to find an answer anywhere... how long will home made BBQ sauce last if refrigerated?

    Mine never lasts long enough to go bad.. But I have had it in the frig for at least two months with no issues

      I figured it was probably pretty long, given that most of the things in it have pretty long shelf lives, unless you start adding dairy or something. The only thing I'm curious about is the ones that have minced garlic in, for example. Stilltasty.com says chopped raw garlic only lasts two days in the fridge. That seems pretty low to me.

        There are too many variables to say, acid content for one and like what was already said, the ingredient list.

          But the other ingredients extend the life- A sauce stiff in vinegar/acid and salt/sugar/honey could last years. Vinegar itself will sit for decades in some cases. Remember you are limiting it's exposure to oxygen as well- which is what will kill open chopped garlic in a few days.

            True. If you get the acid content up ( pH low ) it can last a very long time. My Dark Side BBQ sauce lasts forever. It contains raw onions but the vinegar content is enough to keep bacteria away... My Mustard base BBQ sauce last a long time and I dont even put it into the fridge...

              My Blackjack sauce will last for several weeks at least, but it's usually gone within a day or two of being made.
