  • Another one of these and a couple of those

    Was thinkin of smokin some ribs this weekend but after slicing up a couple of strip loins yesterday...well I knew it wasnt gonna be ribs...

    This about a 4# chunka strip loin...its where the KC strip comes from...
    Rubbed her down with some worch sauce and then some salt and just a little black pepper In the pan underneath is some beef broth, red onions, and some mushroom sauce...



    On the CG with some spuds for supper...smokin them for a while and then taking it inside...cooled and cut up to be seasoned and roasted in the oven...
    The sausages are some whole hog sausage that a bud from work gave me...got them from a guy in Missouri...I here they make good sausage there... He said smoke em up and bring em to work so we can eat em at break time...I said OK


    Hopefully...more pics to come... you know...

              Here we go...yeah Im still here...

              Smoked it till 138...some would call that overdone butt....you tell me...
              straight outta the smoker...rested for 30 min or so....



              Sliced...



              And plated....the roasted spuds and the fried squash and the steamed corn.......notice the big plate of maters...couldnt fit them on my plate... I think I needed a platter


              I dont normally rave about my own cooking but....OMG....
              I'd give myself points if I could....

                That didn't sound quite right!



                Wish I had some of that beef. Even has a nice lil ring on it!

                              for the crust, smoke ring too. I prefer it not so well done , but you can't do it wrong with a roast of beef, tasty even extreemly well done too. I'll take a slice or two. LOL
