  • Freezing Corn vs. Canning Corn

    My wife canned corn for years until we tasted this method -

    Freezing Corn

    16 cups of cut corn = 4 quarts
    4 teaspoons of salt
    1 cup of sugar
    4 cups of water = 1 quart

    Mix salt and sugar with the water add corn and simmer 10 minutes.
    Drain water from the corn and let cool in the fridge till corn reaches fridge temperature.
    Pack corn in Ziplock freezer bags and freeze.

    This tastes better than canning corn, lasts at least a year for us (gets eaten before next season for us) and is much less work than canning.

      we do the same thing, marty, sorta......

      i smoke the corn first, then cut off and then freeze.


      let us not cry because we lost someone, but let us smile because we enjoyed their company for what time was allowed us!

        We freeze, but we use 1/2 gallon milk cartons. We stand 4 ears of corn up in the carton, cover completely with water, then fold the top back and staple to keep closed. I always liked this method because the cartons store nice and orderly in the upright freezer, and the corn tastes as close to fresh as I've ever had. Plus I love eating my own garden grown corn right off the cob in the middle of January.
        Of course since we freeze them whole, we have to be careful how much we do or we'll fill an entire freezer. I think we'll try your method with a little and compare.
        But I hate canned corn.

          Hey Moss, thats how we have been doing it for years. But we also freeze about 2 dozen ears cut in half also. Regular canned corn sucks if ya ask me.

            Frozen crn here too. I cut the raw corn off the cob,put enough in a bowl to fill a zip lock freezer bag. Then put in the micro wave for 2 minutes. put into the freezer bag, seal then freeze. Best corn you will ever eat.

              And we do it differently yet. I'm sure all the above are better than store bought or canned. I set up the turkey cooker out on the back deck and bring a pot of water to a boil, drop however many husked cobs in the straining basket for about 3 minutes after it returns to a boil. I have ready in the kitchen, the double sink filled with cold water. drop the blanched corn in until it cools, replace the water if it warms up. Then on a sheet pan with my fillet knife I cut the corn off the cob and my wife picks it up with a spatula and bags it. We always make one real big bag for Thanksgiving. I have tried a few ways to freeze it right on the cob but was never happy with the results and like said it takes up too much room in the freezer.

                  Canned corn doesn't suck - it's good for chumm'enn carp

                  I'll 7th the frozen corn route.
                  Our process - blanch for 3 minutes, I use the turkey fryer for this, cut off the cob, into quart ziplock freezer bags, and into the freezer. Not too long ago (this spring), we found a package from 07' and it was just fine. Depends on the yeld, but we try to do between 50 and 70 quarts each year. By using ziplocks, you can flatten them out and really take advantage of freezer space.

                  The corn is a lot less messy if you blanch first, then cut.
                  If you use the turkey fryer and basket, you can go through a pile of corn in a hurry.

                      sounds a lot like what we do. One thing I have been doing also is putting a diced jalap and a diced green pepper in the bag as well. the taste really comes through

                        What?!? None of y'all fry your corn in bacon grease? My Mom does something similar to Marty's method, but no sugar and no water. She fries it about 5 minutes in bacon grease and butter, then cools, and bags in Ziplocs for the freezer. When she prepares it to eat, she lets it thaw then fries in bacon grease again for about 5 minutes. Adds a little butter, salt and pepper and it's ready

                        Gunny, I like your method for corn on the cob. We'll have to try that.

                            My parents always froze corn on the cob. Not exactly sure of the process Mom used. Didn't have sense enough to pay attention to those things when I was younger. I would guess it was pretty similar to Marty's method though.

                            I also remember lots of crappie frozen in the milk cartons like Tom was talking about. We had a pretty sizable chest freezer in the house back then. I don't think it was Energy Star compliant. I don't remember it shutting off much.

                            Sometimes Dad would just freeze milk cartons full of water in there and use the ice blocks on their fishing trips. It stacked nice and neat.
